Diabetic Starter Recipe - Grill Vegetable Soup
1/2 c. onions, cut into 1/2" cubes
1/2 c. celery, cut into 1/2" cubes
1/2 c. carrots, cut into 1/2" cubes
1/2 c. potatoes, cut into 1/2" cubes
1 (16 oz.) can whole tomatoes
1/2 tsp. sugar
1 c. frozen mixed vegetables
5 c. water
Salt & pepper to taste
In a kettle, sauté onions, celery, carrots and potatoes for about 15 minutes.
Add tomatoes, sugar, frozen mixed vegetables and water.
Simmer until vegetables are done, about 15 to 20 minutes.
Add salt and pepper to taste.
